Meet Allison Rifkin, the health-conscious founder behind The Green Collective—a Denver-based eatery taking a holistic (and delicious) approach to food. We recently sat down with her to chat about her love of health and wellness, and of course, how she's enjoying atōst these days.

I got it from my mama! But seriously, we grew up eating healthy and clean food which was where my love for wellness blossomed.
I was diagnosed with an autoimmune thyroid condition in 2014 and through a functional medicine doctor learned about the importance of eating for thyroid health. I changed up my diet which in turn completely changed how I felt. I traveled a lot for work in my previous career and had seen so many amazing health foods concepts in New York, LA, San Fran etc. I was inspired to bring a healthy concept to Denver.
The ingredients are everything! We take great care with where we source ingredients from and we make sure to use bright, fresh whole ingredients. Everything at Green Collective is house made. We source organic and local whenever possible.
The natural and real ingredients! As someone who is health conscious but always enjoys a good cocktail, atōst is perfect for me! I love feeling good about what I am putting into my body. I also just adore the founders and their story.
It has been so much fun to mix our cold pressed juices with atōst. It makes the best cocktails! My current favorite is our Sunshine juice with atōst roots. You can find the recipe below.
2oz atōst Roots
1oz Green Collective Sunshine Juice
.5oz Fresh Lemon Juice
.5oz Simple Syrup
2 Dashes Angostura Aromatic Bitters
Fill a glass with ice and add atōst Roots, Sunshine Juice, fresh lemon juice, simple syrup, and Angostura orange bitters. Gently stir, garnish, raise a glass and enjoy!
